Dehydration of vegetables is an ancient technique that was done by Asian people to preserve fruits and vegetables for later use. In the past, dehydration of vegetables was done by placing the vegetables and fruits under the sunlight, or strong wind. Now, modern technologies and equipment are designed to dehydrate vegetables

Dehydration of vegetables means removing the water from the vegetables. Because of the lack of water, there will be no moisture. Ultimately, no microorganism will survive and the vegetables and fruits can be kept for a long time. Dehydrating vegetables and fruits is now easy. There are many dehydrator machines that are helpful for carrying out the dehydration process. 

All you have to do is place the vegetable or fruit in the dehydrator oven and set the temperature. Vegetables are dehydrated because they are a good source of nutrients. Some vegetables and fruits are seasonal and are not available for the entire year. 

By dehydrating them, you can enjoy such groceries all over the year. Dehydrated vegetables are mostly used for making soups, sauces, casseroles, stews, etc.

The amount of nutrients in fresh and dehydrated vegetables is almost the same. But, dehydrated vegetables are deficient in some vitamins as compared to fresh vegetables. No issue,  you can overcome the deficiency by taking extra vitamin pills or through other food sources. Due to being lightweight and having less space, they are highly preferred by travelers to maintain their nutrient deficiency throughout their journey.
